STAAD.Pro can generate wind loads on the windward face, leeward face and the side walls of a closed structure. It can also generate wind loads on open type structure. There is no provision to automatically generate wind loading on the roof. However one can add these manually using other loading options like nodal load or member load on the roof members. These loads can be added as part of the wind load case so that they act simultaneously with the lateral wind forces generated on the sides of the structure.

You can definitely define earthquake loads too and STAAD.Pro does support seismic load generation as per a number of building codes including IBC/ASCE.
You can use Structure Wizard to generate the truss and merge that with your STAAD.Pro model.
